There's at least two unaired plus there is a couple additional special episodes.
They can be close at the top, too.

From what I can tell, it's June 23rd, with the last taping of S39 being on June 2nd.

The last show of the 39th season will air in August. I read from somewhere that on June 2, they will be taping a Back to School episode.

I would have to say August 20 seems like a more likely day for Season 40 taping to begin.  I'm not sure but I think taping for a new season usually begins in August.  Also, since the last episode of Season 39 is June 23, it would be seem weird to have a season start taping while the previous season is still airing.
However, since vadernader said the last taping is on June 2, it might be that June 20 is the first taping date of Season 40.

So I'm understanding this correctly during the year they tape 2-4 weeks before the show airs. Yet when it comes to the start of the new season they are 2-3 months behind from when the show tapes to when the show airs? If this is the case is there ever a 2 or 3 month gap when they don't tape or very few tape dates in the season?

There are constant "breaks" within the season, e.g. Thanksgiving, Christmas, etc., which gets it closer to the 2-3 weeks during the season.

It also gives them the ability to cancel tapings for things that come up unexpectedly during the season (weather, illness/surgery on Drew's part, etc.) without needing to scramble and make up for it later.
