The time feels about right to me for a new Tic-Tac-Dough. Keep it as similar to Wink's syndicated version as possible, adjusted for inflation (although I would keep the 1990 revival's giving the contestants control over stopping the category shuffling and perhaps go with its bonus round of finding a tic-tac-toe, although make sure both X and O make one on the board so no one's short-changed), and it should at least be decent.
High Rollers could also be due for another run, and again, not really much would need to be changed other than upping the payouts ($25,000 for clearing all the Big Numbers, perhaps)
And certainly many obscure shows could be given a second life: with minor adjustments, Catchphrase, Wordplay, Whew!, and Bumper Stumpers seem like decent options, while Caesar's Challenge, Top Card, and Trump Card could work even if divorced from their original settings (perhaps set the former in a Roman coliseum-like setting, the latter two in casino-like ones)
